Preparation
- 1 head of cauliflower, – cut out core & chop large chunks
- Place in food processor – until tiny pieces (can shred on grater)
- Skillet – 2 tbsp coconut oil or olive oil, Dice ½ yellow onion (& red bell pepper) and saute with 1 t. salt until onion begin to brown.
- Put shredded cauliflower into pan, stir well. Cook 5 minutes, adding another ½ tsp. salt
- Stir well and cover turning heat to low and cook for 5 min. more.
- Turn off heat allow to steam for 2 minutes before serving hot.
- Reheat – add to pan with 2-3 tbsp of water stir cover and heat medium for 5 min or until heated.
Donna’s Tip: You can substitute rice with cauliflower for stir fry.
